la restauration de bâtiemnts historiques, et plus spécialement la restauration totale de la Tour communément appelée "Tour du Grenier à sel, ou Tour des Vieux Greniers" sis 41, rue des Vieux Greniers à Cholet et figure sur la parcelle cadastrée AB n° 199 ; la dite Tour qui est un bâtiment du XVIème siècle, est inscrite à l'invantaire des monuments historiques suite à l'arrêté du 1er décembre 1969 ; la restaurtation de la Tour entrainera celle de l'immeuble en mitoyenneté, un logis destiné à usage culturel et évènementiel ; la vocation de la Gabelle est ainsi d'assurer, la sauvegarde, la conservation, et la mise en valeur de ce bien immobilier qui fait partie du patrimoine Choletais ; pour ce faire la Gabelle recourra à des dons divers ; ils seront évoqués à l'article 10 - ressources (infra) ; ainsi que la réalisation de toutes autres opérations ayant un lien direct, ou indirect, avec l'objet précité
